Ingredients:
1kg Cake Flour
300g Oats
145g Allbran Flakes
285g Sunflower seeds
30g Baking powder
416g Brown Sugar
500g Unsalted butter
500ml Buttermilk
10g Salt
2 Eggs
Method:
• Mix all the dry ingredients in a mixing bowl.
• Melt the butter
• Beat the egg and buttermilk together then add to the butter mix well.
• Add the wet ingredients to the dry ingredients and mix into firm dough.
• Then add to a greased deep baking tray and bake on 180 for 40 – 45 Minutes.
• Immediately as you remove the rusks from the oven slice the rusks into portions (as per training).
• Allow to cool properly before removing from the tray
• Now take them out and separate onto a fresh tray and place back into the oven to dry at 50 degrees for 1 ½ - 2 hours. Keep checking regularly.
