Luxury Dolphin Retreat and Moroccan Cuisine with Ishvara & Courtney

Experience an ideal weekend on the shores of Southern Mozambique. Delicious food and heart-felt dolphin moments woven into a unique adventure for the decadent soul.

Moroccan cuisine is considered one of the most important cuisines in the world. One of the reasons for its unique taste is its remarkable diversity of influences. In Moroccan dishes, one can trace the country’s long history of colonizers and immigrants who have left their mark in more than one way. The cuisine of the first inhabitants, the Berbers, still exists today in the staple dishes like tagine and couscous. The Arab invasion brought new spices, nuts and dried fruits, and the sweet and sour combinations that we see in dishes like tagine with dates and lamb. The Moors introduced olives, lemons and oranges while the Jewish-Moors left behind their sophisticated preserving techniques that we see in the frequent use of preserved lemons, pickles, etc.

At Ponta Malongane there are approximately 250 + Inshore Bottlenose dolphins that are resident in the area. It is here where you may have several opportunities to meet these magical beings in their natural environment. Ishvara
I have always had a keen interest in various world cuisines because i grew up in a family with well travelled parents. My main focus is on traditional ways of cooking, particularly that of North Africa, the Mediterranean, the Middle East, Central Asia and South East Asia. I began working at a Vegetarian Indian Restaurant at Laguna Beach, California in 1987 and have been involved with catering and teaching ever since. In recent years I have also taught on occasion at Prue Leith Chef Academy. I am a traditionalist, so you won’t ever catch me cooking anything fusion, rather teaching exact recipes the way they have been taught for centuries. I love to share my knowledge and experience of various ancient cultures with people. I have travelled to Morocco on many occasions and always had a strong connection with the land and its people, maybe its the Sephardi Jewish connection on my fathers side. I spend my time teaching various ethnic cuisines at peoples homes in Johannesburg - when I am not travelling to exotic destinations....

Courtney Ward
Courtney Ward ‘Essentially a performer in the great arts of the divine’, Courtney is a talented artist, actor and musician. She is especially gifted in her spontaneous ability to apply her artistic gifts and musical talents in a group dynamic in aid of personal transformation and creativity. Courtney has been exploring the powerful use of sound vibration healing for the past 15 years. It has taken her on a journey of shamanic sound discovery that lies within the seed core of us all. For the past 11 years, Courtney has worked intensively with a pod of 200+ dolphins in Southern Mozambique as Halo Gaia’s owner and leading Dolphin Swim Facilitator. Through her intimate relations with the dolphins, her love of people and her exceptional musical skills, Courtney offers an extraordinary Dolphin Swim program.
