Wakame
Wakame is a sweet thin-leafed and stringy sea vegetable. It is high in amino acids, vitamins, and trace minerals, and has a subtle but sweet flavour, and a tender texture.
To prepare: Cut into smaller sections as desired. Note that once rehydrated, it will grow in size. Soak a small amount in tepid water for 10 – 30 minutes, depending on cooking time to follow. Can be added to miso soups, seaweed salads, and vegetable and rice dishes.
