Brown Rice and Barley Salad
Serves: 4
Ingredients:
200g Short grain Brown rice 180g Pearl barley 1 red onion, diced 2 Granny smith apples cubed 1 Stick celery thinly sliced Handful flat leaf parsley chopped Large hand full of washed rocket and roughly chopped 100g goats cheese feta
Method:
1. Cook the rice and the barley in a two to one ratio or follow the instructions on the packet. 2. Combine the rice, barley, onion, cubed apple, celery and parsley in a big salad bowl. 3. Turn the rocket leaves through the mixture and sprinkle the crumbled goats feta on top. 4. Drizzle with dressing and serve
Dressing
Ingredients:
¼ cup hummus ¼ Cup organic plain yoghurt Fresh coriander leaves Juice from one lemon 1tsp honey Salt and black pepper to taste
Method:
1. Combine all the ingredients in a jar and shake well.
