This recipe comes from ‘The Patrick Holford Low-GL Diet’ book. It is easy to make and very tasty. You can swop-out the chestnuts with another type of nut if you cant find chestnuts.
Ingredients
170g Peeled cooked chestnuts 1tbsp Olive oil 60g Brown basmati rice 1 Small onion chopped 2 Cloves garli 150ml Vegetable stock 110g Shiitake mushrooms sliced 2.5cm Root of ginger 2 tsp Tamari or soya sauce 60g Frozen peas
Method
Gently heat the oil in a heavy base frying pan and fry the rice 3 – 4 minutes Add garlic and ginger, string for 30 seconds then add the onion, cooking for a further 3 minutes. Lastly add the mushrooms and cook for a further 3 minutes.
Stir in the Vegetable stock liquid and the chestnuts, then cover and simmer until the liquid is absorbed and the rice just tender (+/- 35minutes)
Stir in the green peas and allow them to cook
