Ingredients:
Two slices of low GI bread
15ml Hummus
Shredded mixed baby leaf lettuce
Alfalfa Sprouts
15ml Shredded pepperdews
30ml Crumbled goats feta
Half a avocado
Method
Butter each slice of bread with hummus (see hummus recipe)
On on of the slices:
Add some shredded lettuce
Add sliced avocado
Add to the avocado the shredded pepperdew
Crumble the goats feta over the open sandwich
Add a small handfull of fresh alfalfa sprouts
Close the sandwich and enjoy
