30ml Roasted sesame oil 40g Smoked tofu, diced 200g Mixed stir fry vegetables (julienne carrots, cabbage, spinach, baby marrow, broccoli) Handful of sunflower sprouts 5ml Soya sauce Pinch Chili powder 2 Pinch Turmeric powder 3 Pinch Corriander powder 1 Pinch Sea salt 15ml Tamarind sauce 30ml Vegetable stock liquid 125ml Coconut milk 5ml Fresh ginger 2g Chopped garlic Fresh corriander Raw cashew nuts
Method
Heat the sesame oil Add the smoked tofu and sauté for 2 minutes Add the vegetable mix and stir-fry for 4 minutes until veggies are hot not over cooked Add the soya sauce Now add the spices and salt Mix well Add the coconut milk Add the tamarind sauce Add the veg stock liquid Add the ginger juice Add the garlic Cook for a further 3-4 minutes or until cooked. Add the cashew nuts and fresh corriander last
This dish is served with rice noodles or short grain brown rice
