Cranberry and Pumpkin seed Oat Crunchies
Ingredients:
300g Cake flour or spelt flour 5g Sea salt 300g Coarse oats 200g Cranberries 200g Pumpkin seeds 150g Desiccated coconut 330g Organic brown sugar 240g Organic butter 40g Raw honey 10g Bicarbonate soda 5ml Vanilla essence 1 egg whisked
Method:
1. Pre heat the oven to 180 degrees. 2. Using some butter grease a baking tray 40cm x 18cm 3. Mix all the dry ingredients together and set aside. 4. Melt the butter and the honey and cool slightly 5. Add the wet ingredients to the dry ingredients except the egg. 6. Mix very well using your hands 7. Add the beaten egg and mix again 8. Press into the baking tray making sure they pressed in properly. 9. Bake slowly at 180 for 20 minutes 10. Remove from the oven and cut while the crunchies are hot 11. Allow to cool and then remove from the tray
