Earth Quinoa
What is it:
Quinoa, pronounced kinwa or kinoa, is a grain-like plant from South America, farmed mostly for its edible seeds. It is not from the grass family, and therefore is not classified as a grain or cereal.
Benefits and Uses:
Quinoa provides a wholesome source of carbohydrates, fibre, protein, and micro nutrients such as B vitamins, vitamin E, magnesium, phosphorus, iron, and zinc.
Unlike grains such as wheat and rice, quinoa contains a complete set of amino acids, including lysine. Protein totals 12 – 18% of this powerful little seed, which means that is the perfect addition to vegetarian diets.
The protein and fibre make up of quinoa, along with its low glycemic index of 35, means that it wont spike blood sugar levels, and it should be considered as a main stay of diabetic diets.
In addition to the above stated benefits, quinoa is a gluten free, and alkaline forming food.
Preparation:
Quinoa is best cooked like rice.
Rinse well, add two parts water, and simmer for 14 – 18 minutes. At this point one will notice that the germ is separating from the seed, which looks decidedly more translucent than it did before.
When cooked, quinoa looks similar to couscous, but has a light, airy texture, and a mild, nutty flavour.
Quinoa can be cooked in stock to add flavour, used in pilafs, or served as a protein-rich breakfast porridge mixed with honey, nuts, or fruit.
Try germinating raw quinoa for 2 -4 hours in a little water. This increases digestibility and boosts its nutritional value.
