Quick And Cool Gazpacho Soup Recipe
( makes 4 portions)
What you’ll need:
• 5 ripe medium tomatoes • 1 red/yellow pepper • 1 small onion red • ½ English cucumber • ½ cup water • 2 cloves garlic • ¼ cup olive oil • Small bunch basil • Small bunch coriander • Smaller bunch rocket • 7.5ml salt • 2.5ml black pepper
Method:
• Core tomatoes and cut up roughly – add to processor • Deseed peppers –add to processor • Peel cucumber – add to processor • Cut red pepper roughly – add to processor • Add garlic, herbs, salt, black pepper water and olive oil – process all. • Enjoy chilled with slice of gluten/wheat free toast drizzled with olive oil.
