Quick Tofu Salad Recipe
What you’ll need:
• 1 block tofu • 1 small English cucumber • 3T-spoon olive oil • ½ red onion • 2t-spoon salt • 1 lemon • 1 stick celery • 10g fresh rocket* • 10g fresh basil* • Sprig fresh mint* • Salad greens
Method:
• Cube tofu into small feta cube size pieces and add to mixing bowl • Peel and fine grate cucumber and add to mixing bowl. • Cut red onion finely and add to mixing bowl, with squeezed lemon juice, olive oil and salt. • Gently mix the ingredients together helping the tofu absorb the flavours from the ingredients. • Cut celery into thin diagonal slices – add to mixing bowl • *use whatever herbs you like, chopping finely, and add to mixing bowl. • Mix all ingredients together (and if you have time place bowl in fridge for a 30 minutes – allowing the time for the tofu to best absorb all the flavours) • Add your choice of salad greens to a salad bowl and add tofu-mix. • Enjoy!
