Earth Buckwheat Hulled
What is It: Buckwheat is a grain-like crop, or pseudo cereal. It is not a grass or a cereal like wheat, but is rather a triangular seed with a hard outer hull, and a starchy white inner.
Benefits and Uses: This tasty little seed is gluten free, and is rich in starch, protein, minerals, and antioxidants. It contains all the essential amino acids, iron, zinc, selenium, rutin, and tannin.
Rutin strengthens capillary walls, and supports a healthy circulatory system, and the protein present in buckwheat binds to, and aids the removal of, cholesterol from the body.
Anyone suffering with coeliac disease, or gluten allergies should also expand their dietary allowance by adding this wonderful little seed to their shopping list.
Buckwheat is commonly used in Russia, Ukraine, and Poland. Traditionally, a porridge was made by roasting the buckwheat groats, and then cooking them in a broth. When Jewish immigrants brought this dish to America it was labeled 'kasha”, and today buckwheat is often called by this name. Buckwheat tastes great on its own, or when added to soups, made as a porridge, or added to rice, or barley dishes. Alternatively one can try sprouting the little seeds for four to five days, and enjoy their mild, nutty flavour.
