Earth Muso Tofu Nigari
What is It: Nigari is a key ingredient in the preparation of tofu, and has been used over hundreds of years in China and Japan for this culinary purpose. Also known as magnesium chloride, it is the useful byproduct of refining salt from sea water.
Benefits and Uses: Earth Muso Tofu Nigari is used to solidify tofu, giving it a firm texture, and bringing out its naturally 'sweetness'. It also gives a smooth texture to soy milk.
To make tofu at home, use 1,5 to 2 teaspoons nigari per 1000 – 1500ml of fresh soy milk (adjust the amount for the desired firmness).
Tofu is fairly bland on its own, but it attracts flavours beautifully, and simply needs to be prepared properly to achieve this. Tofu can be lightly fried with stock, onions, and soy sauce before being added to stir fries. Try cooking it into into miso soup, by adding it at the beginning stages so that it can absorb surrounding flavours. Alternatively tofu can be oven baked with soy sauce, or other flavour rich ingredients, and added to salads, bakes, pastas and wraps.
Store Earth Muso Tofu Nigari at room temperature in a sealed container to maintain a shelf life of 1 ½ to 2 years.
