Ingredients:
2 table spoons Verjuice Pinch Himalayan rock salt Pinch ground black pepper 1 tsp. coconut sugar 2 tbsp. organic olive oil 260g washed spinach organic ½ red onion thinly sliced 150g large red grapes 150g goats feta 2 shallots thinly sliced ½ cup toasted sliced almonds
Method:
In a large mixing bowl, whisk together the vinegar, salt and black pepper. Gradually whisk in the oil until it thickens. Add the spinach, grapes, shallots, almonds and toss gently. Sprinkle the goats feta on last.
