Quinoa Flakes
A delicious breakfast suitable for vegetarians and those sensitive to gluten. Can be used in muesli, in baking, or in porridge. This grain-like seed is most notable for its high protein content (12%–18%), and that it provides all the essential amino acids.
Cooking Instructions: Add 1 cup quinoa flakes to 2 cups boiling water. Add a pinch of salt, and simmer for 4-5 minutes, stirring continuously. For a creamier breakfast, replace some of the water with soya or rice milk.
