Raw can be decadent and healthy at the same time, this recipe was originally created by Peter and Berwyn Daniels from Rawlious and is a must if you want to spoil yourself without the guilt.
Crust Ingredients:1 cup
pitted dates1 cup
hazelnuts½ cup
coconut1 tbsp. apple juice
Filling Ingredients: 4 avocados
1 cup
raw cacao powder¼ cup
coconut butter½ cup
agave nectar1 tbsp. orange juice
1 tsp. orange peel, chopped
Method:For the crust:Chop the pitted dates in to small pieces.
Add the hazelnuts, coconut and apple juice.
Turn on the Magie mix and slowly add the ingredients while the machine is running.
Blend all the ingredients until they are mashed up.
Press into the mould and then place into the freezer to set.
For the filling:Halve the avocado and scoop into the Magie mix.
Add the coconut butter, cacao powder and agave nectar
Blend until very smooth.
Add the orange rind and the orange juice and blend further until smooth.
Remove the mould from the freezer and fill with the chocolate mousse.
Place back into the freezer to set.
