Serves 6
Ingredients- 1 tablespoon extra-virgin olive oil
- 4 cloves garlic, sliced
- 4 yellow Organic patti pans, halved and sliced into half-moons
- 1 Organic baby marrow, halved and sliced into half-moons
- 1 cup halved red Organic baby tomatoes
- 1 cup halved yellow Organic baby tomatoes
- 1/2 teaspoon Himalayan rock salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons chopped fresh oregano
Method
In a large skillet, heat olive oil over medium-high heat. Add garlic and cook, stirring frequently, until fragrant, about 30 seconds. Add yellow Patti pans, Baby marrow, salt and pepper and cook, stirring occasionally, until vegetables begin to soften, about 3 minutes. Stir in the red and yellow tomatoes and continue cooking just until vegetables are tender and begin to release their liquid, about 3 more minutes. Remove from heat and stir in the oregano.
