Gluten Powder
Gluten powder is extracted from the endosperm of wheat. Gluten is high in protein, low in carbohydrates, and has a sticky, spongy texture when cooked.
It is used to make seitan, a chewy meat-like substitute often used by vegetarians in place of tofu. It is also added to multi-grain breads, cakes, and other baking, to lower their GI and prevent them from crumbling.
