Yellow Mealie Meal
Probably the humblest of all breakfast cereals, mealie meal, also known as corn meal, maize meal, grits or polenta, is nevertheless a reasonably balanced, nutritious way of giving your day a kick-start. In its unrefined, stone-milled form, as we sell it, it is loaded with carbohydrates, protein, fibre, the B vitamins niacin, thiamin and riboflavin, and minerals potassium, magnesium and iron, and it contains very little fat and almost zero sodium.
So you can be confident that it’s not just a low-fat, zero-cholesterol meal, but also good for healthy body cells, for the metabolism, for good kidney, muscle and heart function, for healthy bones and nerves, and to combat fatigue and high blood pressure.
Preparation:
Bring 3 cups water to boil. Stir in 1 cup and 1 tsp salt.
METHOD (recommended) pour mixture into a glass baking dish and bake at 10 deg. Celsius for 1 hour. Stir once after 15 minutes.
METHOD 2: Simmer on low heat for 1 hour. Serve together with honey and (soy) milk and your flavoured selection of nuts, seeds, raisins etcetera.
