Spelt Flour
Spelt is an ancient grain similar to wheat. It has a sweet, nutty flavor, and is high in protein and many other nutrients.
It is said to be easier to digest than wheat, but does also contain gluten. It is thus not recommended for those on a strict gluten free diet.
Spelt Flour can be used in place of what flour for baking and cooking.
