Ingredients for the Dressing:
2 tbsp Lemon juice 2 tbsp Brown Sugar ½ tsp Paprika ¼ tsp Ground Cumin ¼ tsp Cinnamon ¼ tsp Salt Cayenne Pepper Olive Oil Fresh Parsley, chopped
Method for Dressing:
• In a mixing bowl combine the lemon juice, sugar, paprika, cumin, cinnamon, salt and cayenne pepper and stir until the sugar and salt have dissolved. • Add the olive oil and some fresh parsley.
Ingredients for the Salad:
Chick Peas Couscous or Brown Rice or Quinoa Baby Spinach Roasted Cashew Nuts Dried Peaches diced small Fresh Coriander finely chopped Fresh Mint Dried Olives Pepperdew
Method for Salad:
• Cook the rice, couscous or quinoa and rinse thoroughly. Allow to cool. • Make the dressing and marinade the grain and the chickpeas in the dressing for 20 minutes. • Prepare all the other ingredients in the mean time. • Now add all the other ingredients to the marinated grain and the grain. • Serve on a bed of fresh baby spinach. • Add extra dressing if required
