Ingredients:
12 Medium Potatoes Large cubes 2 Large Cauliflower heads 3 Onion Diced 3 tbsp Crushed ginger 4.5 tbsp Crushed garlic 12 tbsp Sunflower oil 42 Curry leaves 9 tbsp Tomato paste Mixed into 3 cups of water 9 tbsp Cape Malay spice 6 Bay leave 3 tsp Salt 3 Can coconut milk Tamarind tea
Method:
• Heat oil • Sauté onion until soft. • Add ginger, garlic, and curry leaves and sauté for a few minutes until onions are slightly brown. • Add Malay spice and fry for a few minutes. • Add tomato paste and mix well. • Allow to boil and turn the heat down to a simmer. • Simmer for ten minutes stirring regularly • Add potatoes, bay leave and three cups of veg stock. • Stir regularly • Add tamarind tea and simmer for 18 – 20 minutes. • Add cauliflower and coconut milk. • Add more water if necessary. • Cook further until potatoes are cooked but firm.
