Ingredients:

4 Onions Chopped into wedges
8 Large carrots Cut into rounds
12 Baby marrow Cut into rounds
4 Small butternuts Chopped
5 Egg plants Cut into rounds
4 tbsp Chopped garlic
1 tsp Chili powder
2 tsp Cinnamon
8 tsp Ground cumin
8 tsp Ground coriander
4 tsp Ground ginger
4 tsp Turmeric
1 cup Olive oil
1.700 Crushed tomato
2 cup Vegetable stock
2 tbsp Fresh coriander
4 tbsp Honey


Method:

• Place onion and vegetables in a large bowl.
• Mix together spices and add to the vegetable mix with the olive oil.
• Place in the oven and cook for 30 minutes until soft.
• Transfer all the vegetables to a medium pot.
• Add the tomatoes, honey and stock and cook for a further ten minutes.
• Add the fresh coriander at the end just before serving.

It says 1,700 (one thousand seven hundred) tomato. And crushed means crushed, not chopped (chopped is more like cut up with a knife, crushed is more like squashed). The only reason i can see here for using crushed tomatoes, rather than chopped, is that it is a lot faster to crush 1,700 tomato than it is to chop 1,700 tomato. Happy crushing for all those bold enough to attempt this recipe!!!
