The kombucha has a healing history in China and Russia. The fungus has beneficial properties for the immune system (helps you fight candida, too!), for the digestion and skin. Look after your fungus well – it keeps growing! It transforms sweetened tea into a healing drink. Simple sugar is broken down into complex, digestible sugars.
The fungus does not like to come in contact with METAL,
but crockery, glass and plastic are okay.
Use the glass container to both make the tea in AND to let the tea brew and ferment with the kombucha fungus in!
COLLECT TWO LARGE EMPTY PLASTIC MINERAL WATER BOTTLES.
In the evening:
Wash your hands with soap. Rinse the fungus under cool tap water and place ‘him’ (or is it a ‘she’?) on a plate or in a tubberware. Pour some kombucha liquid on top. He likes to lie flat, e.g. don’t ‘fold’ him. Place him in the fridge.
Clean the container. Place 2 teabags (green or black) and 2 c brown sugar in the jar. Place a long steel spoon in the jar (to prevent the glass from breaking when you pour boiling water into it). Fill the jar with boiling water. Let cool down completely. It is convenient to make this in the evening; it can cool overnight.
In the morning:
Remove teabags and spoon. Immerse the fungus in the cold tea and cover with the doilie. Place in a nice peaceful spot in your kitchen (out of direct sunlight). Let sit for 4 - 5 days. Then your kombucha is ready. Remove the fungus and start the same process as above…
Strain the liquid into the empty bottles and keep your ready kombucha in the fridge! Drink approx 200ml every day. It is delicious in equal parts with juice (cranberry or mango) and still or sparkling water. Add a little Swedish Bitters and ice!
You may find little ‘wisps’ of fungus still growing in your bottle/s – in the absence of the fungus! This is the so-called ‘mother’ and a sign of quality! You may not like it in your glass though – simply strain when you pour yourself a drink!
When you go away or want to slow down your kombucha production, keep him in the fridge in a tubberware! In time, your kombucha will grow, it looks like a dolphin pod. Give him to a friend with these instructions!
