Tamarind Paste
Made from the pulp of the ripe Thai tamarind pod.
In preparation for cooking, steep in a little water for a few minutes, mash into a paste, and remove any fibrous husks. This paste can be used to enhance the flavour of curries, stews, basting, and vegetable hot pots.
Reputed to support digestion and alleviate flatulence
